EmailSpy is an

Once installed, EmailSpy will record all incoming and
outgoing emails on the system it is installed. The
software can be installed totally hidden and extra measures
are made to ensure it cannot be stopped by use of the task
manager and safe mode options.
You can view reports by hitting your selected hotkey
combination to bring up the password prompt. By entering
your password you have access to all logs on the computer.
Logs can be archived, deleted, and searched.
All logs are encrypted on the computer so they can only be
viewed from EmailSpy itself. Additional options include
the ability to forward all recorded emails to another email
address you specify! This is also done unknowingly to
any users of the computer. By forwarding all emails to
another address you can view recorded emails from work,
another home, while on vacation, etc.
